From Wikipedia, the free encyclopedia.

L 'silage is the product of a technique of preservation of fodder (l 'silage) which is accomplished by acidification of the plant mass at the hands of microorganisms anaerobes in order to prevent spoilage microorganisms and potentially toxic to proliferate inside the plant mass causing the consumption (loss of nutritional value) and the development of unhealthy substances.

The silage is a very old technique (historical documents date back to 1500 BC), consists in the storage of plant mass in special closed containers (the silos traditional) or even, simplest and most common, silo-shaped outdoor bunker, consisting of concrete platforms equipped with containment walls, where the chopped forage is compacted and finally sealed by a sheet of insulating plastic material from the air: the technique allows to obtain a food easy to introduce in food rations for breeding because palatable and chemically stable throughout the year, replacing in all the green fodder (grass) and dried (hay), however, even if feeding bovine latter is maintained in part due to physiological reasons. The silos isolating the mass from the outside environment, preventing the intake of oxygen ; what is naturally present within the mass is consumed in the earliest period of the maturation of the silage by bacteria aerobic present and by the plants themselves. In the early days, in fact, you have a acetic fermentation aerobic which lowers the pH to 4.5-5. The acidification of the silo leads to the development of lactic acid bacteria which will operate the lactic fermentation , bringing the pH to values even lower than 4.

The silage is used not only for fodder, but also for storing cereals in the form of wet grain flour wet or more often, especially when intended for animal feed. Furthermore, it is fairly common practice to silage mixture of flour and parts of forage maize, commonly called MASH drive, obtained by grinding the entire ear ("cob") but not to implement it the husky it the elimination of the cob.

The collection is now fully mechanized and employs machines typically self-propelled forage harvesters, largely agricultural machinery operating with a cutting head suitable for mowing of forage (or a head Cornhusker, for the production of animal food drive, or a head picker for fodder withered) and a rotor trinciante that grinds the vegetable mass moist. The fine is then launched on trucks or trailers, agricultural proceed alongside the forage harvester, or, in models with this feature, stored in a box, and the mass is then transferred quickly chopped in silos where it is drained, leveled in layers and compacted by heavy tractor passing through above. For obtaining a quality product it is important to the accurate compaction and sealing of the silo in the fastest time possible. A good silage must:

The cereal most subjected to this technique is corn, as characterized by:

  • ease of storage;
  • high productivity per hectare;
  • complete mechanization of the crop cycle;
  • ease of insertion in the technique of administration unifeed ;
  • possibility of the whole plant silage, or the mixture of grain cobs (so-called mash integral), or only the wet grain.

They have, however, a certain diffusion additives such crops lactic acid bacteria selected, that, according to the manufacturers, would improve the performance of the fermentation; also used products such as salts of propionic acid in function mold. A silage mal duct can lead to the development of bacteria of the genus Clostridium that contaminating the stable and consequently the milk and the dairy may cause the so called swelling late in cheeses. For this reason, the specification for the production of Parmigiano Reggiano prohibits their use for the cows whose milk is used to produce the cheese, not just feeding, is also prohibited the holding in the company and the shedding of bovine manure fed with this feed on fields that will be fodder for the cows suitable for the production of Parmigiano, precisely to avoid serious damage to the forms that would be rendered unworthy of the brand because of the holes. This limit does not exist for the production of Grana Padano as milk is added to the natural antibacterial lysozyme .
